Wine making: 16/18 days maceration on the skins, with numerous pumping over and delestage and drain 10%.
Aging: in barrique NEVER, ALLIER, TRONçAIS for 10 months, then in bottles for 3 months.
Acidity: 5.2 g/Lt
Dry extract: 34.9 g/L
Grapes and vineyards: “troia” grapes is one of the most ancient and characteristic vineyards of the central – northern part of Apulia. It could be born in the Asia Minor (Troia) and then arrived in Apulia during the Greek colonization. Its name could originate from the city “Troia” situated in the area of Foggia.Wine making: grapes are destemmed, pressed and inoculated with selected yeasts. After these treatments, grapes are fermented at low temperature (23°). The must being in contact with the cap is macerated for long time, with frequent pumping over and delestage for the best color mining, which is further exacerbated by the drain practice that also increases the extract.The wine: dark ruby ??red color, very concentrated with shades of purple, intense and persistent with good balance between fruity and spicy notes, with pleasant hints of licorice and vanilla, this wine is soft and full-bodied, fine and balanced with an elegant and mature tannins.
