LOCOROTONDO DOC BIANCOGrapes and vineyard: The area of ??Locorotondo DOC extends from the towns of Locorotondo and Cisternino and part of the territory of Fasano , also including Alberobello, around 400 mtr. above sea level. The grapes are grown on soils of medium or small extensions, mean age (18/20 years) with farming systems as low sapling or low espalier, ripens in the first week of September and prefers deep soils rich in texture and minerals.Vinification : grapes are harvested by hand following exact ripening indexes , data from the best relationship between sugar and acidity. Once placed in the cellar, the grapes are de-stemmed and crushed as soon as possible (after harvest) and placed in a controlled fermentation at low temperatures (15/18 ° C) in stainless steel silos after a maceration of 18 hours at 4/6 ° C.The wine: the pleasant and delicate aroma of Locorotondo DOC IL SELVA prepares the palate to the taste of the rich dishes of cold starters, grilled vegetables , but especially fish and shellfish. This wine has a slightly fruity aroma and freshness dominant goes even bacon or bresaola carpaccio of wild boar.
